500g granulated sugar

For the Premix (produces 850ml, to serve 10)

Whole cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Put the listed items into a pot, bring to a gentle boil, agitating until the sugar dissolves. Next, turn off the stove and let it to cool entirely. Pour into a sealable bottle, seal keeping it in the fridge, it will last for around a month.

For the Cocktail Base: Combine the specified liquids in a big jug, leave to sit for 60 minutes, then filter it best through a fine cloth, making it perfectly clear.

For serving: Add 85ml of your premix to a stirring glass packed with ice, gently stirring lightly for a minute until cold. Filter into a frosted cocktail glass or equivalent, top with a few cranberries adding the final touch with a quick spritz of the essential oil over the drink.
